Bring to a boil:
2 3/4 cup chicken broth
Add:
Juice of 1 lemon
1 1/2 cup washed quinoa
Simmer for 15 minutes with lid on.
Dressing:
Zest and juice of 1 lemon
salt and pepper
3/4 cup chopped basil
1/4 cup chopped parsley
1/4 cup olive oil
Pour dressing over quinoa.
