Quinoa Pilaf

2 shallots
1 red pepper, chopped
salt and pepper
Fry in oil.
Add:
1 1/2 cups quinoa, rinsed
2 Tblsp olive oil
1 3/4 cups broth
Cook 12-15 minutes, covered.

Add:
1/2 cup slivered almonds toasted at 350 for 6-8 minutes
1 chopped, seeded cucumber
fresh chopped basil
zest of 1 lemon
salt and pepper

Fluff with fork.
