Spaghetti al limone

1 pound pasta
cook and reserve 1 1/2 + 1/4 cup pasta water

Over medium heat
1 Tblsp olive oil
1 medium shallot, minced
1/2 tsp salt
1 1/2 cups pasta water
1/4 cup heavy cream or non dairy milk
Simmer for 2 minutes. Add pasta.
3 Tblsp olive oil
2 tsp lemon zest
1/4 cup lemon juice
1 oz parmesan cheese
1/4 tsp pepper

Put lid on and let sit for 2 minutes.

Add: 2 Tblsp chopped basil and 1/4 cup pasta water.
